Coconut Rice

Toast

Freshly grated coconut, black mustard seeds, cashew nuts, fresh curry leaves (dried if fresh can’t be found) and some channa daal (soaked in water for 20 minutes) in some ghee (or butter).

Cook

Rinsed basmati rice.

Toss

Cooked rice and other ingredients in frying pan.

Sprinkle 

Some salt, sugar, and red chilli flakes.
