Mango Avocado and Quinoa Salad with Chopped Coriander


-Cubed mango chunks
-Chopped avocado
-Chunks of red pepper, raw, or slightly blackened with some oil in a griddle or frying pan
-1/2 cup (or more) of cooked white or red quinoa
-Chopped fresh coriander leaves

Whisk a viniagrette of freshly squeezed lime juice (1-2 limes depending on how juicy), some sesame oil, 1-2 tbsp of soya sauce, a squeeze of honey, grated fresh ginger


Top off the salad with some toasted cashew nuts, sprouts, sesame seeds and a pinch of turmeric
